Muesli bar recipe

I made these last night, inspired by the recipe below:

This is how I altered it last night:


  • 1 cup of barley malt extract
  • 3 cups of oats (quick oats will do)
  • 1/4 cup chia seeds
  • 1/4 cup dessicated coconut
  • dash of cinnamon
  • 50g butter


  1. Preheat oven to 180 degrees Celsius
  2. Melt butter
  3. Combine all ingredients and squish together in a lasagne tray
  4. Pop it into the oven. Put the timer on for 10 minutes
  5. Keep checking every 5-10 minutes until it looks nice and cooked
  6. Take it out of the oven
  7. Let it cool. You could transfer it ont0 a cooling rack, but I left it in the tray
  8. Cut it up


I left out the sultanas, but feel free to add in 1 cup, if desired. Alternatively you could have fresh fruit beside your muesli bar.

These make a fantastic snack for when you’re on the go
