Thanks be to God, generous to provide a bounty…

I am so blessed to have been able to sit down and eat with family members…

My family welcomed a French man who had been cycling into the cosy confines of our home. There was a steaming fry-pan of shallow-fried eggplant a d red bell pepper/capsicum, potatoes and sweet potatoes plus a dainty blue cheese and mushroom tart (my favourite)IMG_6569After we tucked into some rich apple tart and hot tea…


topped with sweet and creamy vanilla ice cream


lunchtime treat: eggs sunny side up, avocado and vegetarian ‘bacon’ on toast…

to make vegetarian ‘bacon’ you can simply mix together this and that. It is very adaptable, but here is what I used:

  • thai coconut flesh
  • soy sauce
  • paprika
  • maple syrup
  • coconut oil
